Zesty Grilled Chicken

Best for JB’s slow-grown, pasture-raised Chicken Thighs (bone-in or boneless/skinless)

When you’ve got quality pasture-raised chicken, a good dry rub and a hot grill are all you need. This zesty blend adds just the right kick while letting the natural flavor shine.

Ingredients

  • 4 chicken thighs (bone-in/skin-on or boneless/skinless)

Dry Rub:

  • 1/2 teaspoon paprika

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • ½ teaspoon cayenne pepper

  • 1 teaspoon brown sugar

  • 1 teaspoon lemon garlic

Instructions

1. Prep the Chicken

Pat the chicken thighs dry with a paper towel. This step is especially important for crispy results if using skin-on thighs. I highly recommend doing this in the morning and leaving them on a plate, uncovered, in the fridge, until you’re ready to grill for dinner.

2. Season Generously

Mix the dry rub, then apply evenly and generously on all sides.

3. Preheat the Grill

Heat your grill to grate temperature 500°F.

4. Grill the Chicken

  • Start over direct heat for 5 minutes, flip for another 5 minutes.

  • Reduce heat a few notch’s and continue flipping 5 minutes each side.

  • Continue cooking until internal temp reaches about 165°F. It should take around 30-40 minutes in total.

5. Rest and Serve

Remove from the grill and let rest for 5 minutes before serving.
