One of the biggest challenges when grilling pasture-raised chicken is getting that skin just right. Because these birds are more active and foraging, the skin is thicker and more elastic. When grilling, the skin can turn out tough if you’re not careful. The secret? Start with perfectly dry skin and high heat.
Ingredients
JB’s slow-grown, pasture-raised drumsticks or wings (or both!)
Your favorite dry rub
Your favorite BBQ sauce
Instructions
1. Dry the Skin (Don’t Skip This Step!)
Pat the chicken dry thoroughly with paper towel. For best results, place the chicken on a rack and let it sit uncovered in the refrigerator for 2–3 hours. This helps dry out the skin, which is key to getting it crispy on the grill.
2. Preheat the Grill
Preheat your grill to about 500°F. High heat is essential for crisping the skin.
3. Season the Chicken
Sprinkle your favorite dry rub evenly over the chicken, making sure to coat all sides.
4. Rotisserie Time
Place the chicken in a rotisserie basket and set it on the grill. Cook for about 30 minutes, or until the internal temperature reaches 165°F.
5. Sauce and Finish
Brush the chicken with your favorite BBQ sauce, then reduce the grill heat to low. Let it cook for an additional 10 minutes to allow the sauce to caramelize without burning.
6. Rest and Serve
Remove the chicken from the grill and let it rest for a few minutes before serving.
